Chickpea macaroni and cheese.
Beyond sausages to go with it.
Cucumber salad in malt vinegar with onions and maybe dill. I'll have to do a taste test before I do much dill.
Kombucha: blueberry basil.
Dessert: strawberries over low-sugar vanilla ice cream.

(23,651 posts)I've seen this meal mentioned more that once lately.
I bought 2 lbs. of bacon the end of April. It was on sale and I promised myself I'd have at least one meal of fried cabbage. I usually make spicy fried cabbage with bacon, onion, whole small garlic cloves, salt, pepper and red pepper flakes. Today was the first day I added cooked egg noodles. Yum!
I had some fresh pineapple and frozen blueberries for dessert.

(25,184 posts)A trip to a Russian supermarket in NYCs Brighton Beach yielded a delicious dinner.
For the appetizer, we got some lovely salmon caviar similar to Japanese ikura and thatll be served in scooped-out slices of cucumber. Dusted with fresh dill and drizzled with lemon juice.
Soft shell crabs coated with flour then sautéed in olive oil, butter and white wine and garnished with capers similar to a francese style. Rice and steamed asparagus to round out the meal.
Brandy and backgammon for dessert.

Re the Russian supermarket on Brighton Beach, my Russian language teacher friend puts together a bus trip there once a year and everyone who goes from the university shops all the Russian places. I haven't gone but might in the future. My friend is quite the organizer. She is such a noted teacher of the Russian language that the CIA used to send people to her classes. Might still do that; I haven't talked to her lately.
Note to everybody who likes cucumber salads with vinegar: you must try malt vinegar. It is outrageously good, and with fresh produce starting to come in, here's a link to note (very simple): Lord Byron's Salt & Cucumbers.

(2,042 posts)Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, savoy cabbage, sliced mushrooms, sliced water chestnuts, and minced garlic and ginger. An orange-garlic sauce and cooked whole wheat spaghetti were added. Topped the dish with marinated air-fried gulf shrimp and chopped scallions. Cheers!🥂
